Despite my proclamation of my love for McDonalds yesterday, I have been cooking and eating a lot more meals at home since discovering Pinterest. I have various boards related to food, from What’s For Dinner, What’s For Breakfast, Snacks and Sides, and Sweet Stuff.
The What’s For Dinner board gets the most action around here. I’ve tried several dishes that have all turned out great. I’m always looking to maximize the yumminess while minimizing the ingredients and difficulty, and Pinterest delivers on lots of great ideas.
This one is the leading winner.
You simply put chicken breasts in the middle of the pan and surround them with whatever veggies you want: we usually do potatoes and/or green beans. Then you slice butter on top (the original recipe I followed called for a stick of butter, but you can do with less) and sprinkle a pack of Italian seasoning over the whole thing. Cover, and cook for an hour at 350 degrees.
It really doesn’t get any easier than that, and the chicken comes out pretty perfectly cooked every time.
This is infinitely customizable. You can do however many chicken breasts you need. You can use one veggie, one on each side, or mixed up veggies. You could try a different seasoning mix. The idea is incredibly simple and you can’t really mess it up.
This week I made a little side dish of tomato slices with mozzarella cheese plus a bit of salt and pepper on top. So good!
