Macaroni and Cheese

I don’t know about you, but I love macaroni and cheese. Dylan does, too! The orange Kraft stuff will do… but “real” macaroni and cheese is even better for true comfort food.

A few weeks ago I bought some single serve frozen mac and cheeses at Costco. I could just pop two in the microwave for me and Dylan, and in two minutes we had a tasty side dish for a quick lunch.

Single serve frozen mac stuff is pretty expensive per serving, though, and I’d pinned a couple of mac and cheese recipes, so I decided to see if I could make my own microwavable mac and cheese.

I’m surprised at how many of the popular mac and cheese recipes are slow cooker recipes. By the time you’ve assembled and added all the ingredients, you could have just gone ahead and cooked the pasta on the stove and been done with it. I went with modifying a slow cooker recipe I found, and it turned out great.

Here’s what you need:

  • 4 C uncooked macaroni (or your preferred pasta)
  • 4 Tbsp butter
  • 7 C shredded sharp cheddar cheese
  • 1 C sour cream
  • 2 cans (10.75oz each) condensed cheddar cheese soup
  • 1 tsp salt
  • 2 C milk
  • 1 tsp dry mustard
  • 1 tsp black pepper

Now remember this is a big batch, since my goal is to freeze some. You can easily halve this recipe.

Boil your pasta. While that’s happening, melt the butter and cheese, stirring constantly until the cheese melts. Add half the milk; stir. Add the rest of the milk, sour cream, soup, and spices; stir.

I find that it takes a bit of patience for all the cheese to smoothly melt in to the mixture. Taste as you go to help pass the time! :-)

Drain your cooked pasta, then add the cheesy mixture. Done!

I ladle the pasta into 2-cup glass food storage dishes and set aside to cool before I toss them in the freezer. I have 6 of the 2 cup containers, so I make that many and the rest is for eating today.

This recipe is a bit runny if you eat it right away. I think it’s tastes best after it’s been frozen and heated up, making it the perfect recipe for this purpose. When we want a frozen one, I simply microwave for 2-3 minutes, stir up well, and it’s good to go!
